ARIA RESORT & CASINO AT CITYCENTER OPENING

Monday, December 21st, 2009

LAS VEGAS  - With characteristic sincerity and a zeal for culinary history, Michael Mina celebrates another of America’s great dining legacies with AMERICAN FISH, now open at ARIA Resort & Casino. Mina’s fifth Las Vegas restaurant pays homage to rustic cooking methods from across the country – lobster boils, clam bakes and campfire cookouts – but applies them with modern finesse for a truly refined affair. Dishes draw on authentic regional products from the nation’s great water ways and woodlands, like Copper River salmon and Great Lakes walleye, with freshness and seasonality setting the pace. The décor by SLDesign brings a contemporary tone to the comfort and familiarity of a mountain lodge backdrop, as it evokes the spirit of the continent’s great landscapes and salutes the time-honored quality of American craftsmanship.

Warmth and hospitality are AMERICAN FISH’s calling card, with interiors by SLDesign that evoke the masculine charm of a 19th-century lodge. Taking cues from Mina’s outdoorsman ethos, visuals allude to the rugged beauty of the American landscape with nature-inspired features and celebrate the superior artistry of turn-of-the-century craftsmanship with traditional woodworking methods.

Located on ARIA’s Promenade Level, AMERICAN FISH produces epicurean cuisine with humble, all-American roots.

CITYCENTER UNVEILS STELLAR LINEUP OF RESTAURANTS AT ARIA

Friday, November 27th, 2009

LAS VEGAS (September 28, 2009) – ARIA Resort & Casino at CityCenter, the dazzling urban resort destination that will transform the Las Vegas Strip when it opens in December 2009, has named the stellar chefs set to oversee its culinary offerings.

“Over the last two decades, Las Vegas has evolved from a buffet town into the global culinary epicenter it is today,” said Bart Mahoney, vice president of food and beverage at ARIA. “When it opens this December, ARIA will forever change the skyline and create a new Las Vegas experience for millions of visitors. With such a stunning project, it is only fitting that the chefs and restaurants follow suit.”

Michael Mina, the James Beard Award-winner who conceived and manages NOBHILL and SEABLUE at MGM Grand, along with his Michelin one-star namesake restaurant at Bellagio and award-winning STRIPSTEAK at Mandalay Bay, will head up AMERICAN FISH. Here, Mina will draw inspiration from the bounty of American lakes, rivers and coasts, with a menu featuring refined American cuisine. Many products will be purchased directly from fishermen, farmers and ranchers allowing diners to enjoy regional dishes they might not otherwise experience. The menu also will feature a wide array of well-sourced meats. Chris Sheffield of SLDesign LLC, in collaboration with Mina, designed a room that resembles a traditional lodge with masculine touches such as warm woods and leather accents.
